La cena vegana sin gluten y saludable que te proponen en Recetas de Gri consiste en unos deliciosos canelones rellenos de berenjenas asadas y nueces. Esta receta es perfecta para los amantes de la comida vegana y saludable, ya que no contiene gluten ni lácteos.

Masa para 4 unidades 1 Taza de Harina de Garbanzo. 1 Cucharadita de sal. 2 Cucharadas de albahaca fresca picada o perejil o cilantro Condimentos a gusto (usé pimentón ahumado y comino) 1 1/4 Taza de Agua. 1 Cucharada de Aceite de Oliva. 2. Cortar las berenjenas en rodajas finas y salpimentarlas. Colocarlas en una bandeja para hornear y rociarlas con aceite de oliva. Hornear durante 15-20 minutos o hasta que estén doradas y tiernas.
3. Mientras tanto, cocinar las láminas de canelones según las instrucciones del paquete. Reservar.
4. En una sartén, saltear la cebolla y el ajo con aceite de oliva. Agregar el tomate triturado, el caldo de verduras, el orégano, la sal y la pimienta. Cocinar a fuego medio durante unos 10 minutos o hasta que la salsa espese.
5. En un bol, mezclar las berenjenas asadas con las espinacas baby y las nueces picadas.
6. Rellenar cada lámina de canelones con la mezcla anterior y enrollarlas.
