Ingredientes para 14 medallones vegetales
2 Tazas de Garbanzos secos crudos
4 Tazas de Agua
1 Cebolla pequeña
3 Dientes de ajo
Pimienta y Sal a gusto
Condimentos a gusto: 1 Cucharada de cebolla, ajo y perejil seco (opcional)
Para rebozar:
1/2 Taza de agua
1/2 Taza de Harina de Arroz
Sal y pimienta a gusto
Condimentos a gusto
Harina de Mandioca tostada, o cualquier harina para rebozar sin gluten
2 Cucharadas de semillas de sésamo molidas.
Sal y Pimienta a gusto
2 Cucharaditas de cúrcuma a gusto

Nuggets Vegetales 39 unidades (se pueden congelar)
1 Taza de Zanahora rallada
Perejil o cilantro a gusto
1 Cebolla pequeña
Condimentos a gusto (curry y pimentón)
Sal y pimienta a gusto
2 Cucharadas de semillas de sesamo molidas (opcional)
1 Taza de Harina de Mandioca tostada o cualquier harina para rebozar sin gluten

Ingredientes para Mayonesa Vegetal
1 Batata o camote
1 Zanahoria pequeña
2 Cucharaditas de sal negra o curry
Sal, aceite y jugo de limón a gusto
Ingredientes:

- 1 taza de proteína de soja texturizada
- 1 taza de agua caliente
- 2 cucharadas de aceite de oliva
- 1 cebolla picada
- 2 dientes de ajo picados
- 1 pimiento verde picado
- 1 zanahoria picada
- 1 calabacín picado
- 1 lata de tomate triturado
- 1 cucharada de salsa de soja
- 1 cucharadita de pimentón
- Sal y pimienta al gusto
- Pizca de comino
- Pizca de cúrcuma
- Pizca de orégano

Instrucciones:

1. En un recipiente, colocar la proteína de soja texturizada y verter el agua caliente sobre ella. Dejar reposar por unos minutos hasta que la soja se rehidrate y absorba el agua.

2. En una sartén grande, calentar el aceite de oliva a fuego medio. Agregar la cebolla y el ajo, y cocinar hasta que estén transparentes y fragantes.

3. Añadir el pimiento verde, la zanahoria y el calabacín a la sartén. Cocinar durante unos minutos hasta que las verduras estén tiernas.

4. Agregar la proteína de soja rehidratada a la sartén y mezclar bien con las verduras.

5. Incorporar el tomate triturado, la salsa de soja, el pimentón, la sal, la pimienta, el comino, la cúrcuma y el orégano a la sartén. Mezclar todos los ingredientes y cocinar a fuego medio-bajo durante unos 15-20 minutos, o hasta que la mezcla esté bien caliente y todos los sabores se hayan mezclado.
