This sweet and crispy coverage but without sugar is the most and I want to show you how fluffy it is it happens to you that the vegan wholemeal sweet bread is as dry as it is hard or it flakes
It disarms a lot when you cut it or it is not very fluffy as it is caked like a lump Watch this video that will not pass you by since the Christmas sweet bread that we are going to make here will
Have three elements that will be more spongy more moist that it disarms less and that it dries out less with the run of the days and this is the mega secret ingredient with which we are going to
Be giving moisture and sponginess to this dough but in a while I will be telling you how it is done Meanwhile, in a bowl you will be placing 300 grams of wholemeal flour of wheat if you want
To do it with other flours Stay until the end because I am going to be giving you the different options To that you are going to add 70 grams of grated coconut This is the other ingredient that is going to give a
Differential touch to this bread sweet but it is optional if you do not want to use it at the end I will also be telling you to replace it with the sweetener that you use the equivalent of
100 grams of sugar and soon the video will be coming comparing the different sweeteners of that video that I already promised A few days ago in the vivo you are going to mix the dry ingredients you make a hole and
In the middle you are going to place 10 grams of baker's yeast dry yeast in this case 60 milliliters of oil and it is time to flavor it here I am placing a teaspoon of orange blossom water it can
Also be sweet bread essence this In case you like it if you can't omit it a teaspoon of vanilla essence and this is also the time to add a citrus zest I forgot in this case but I put it later in the dough you start to mix and you are going to
Add this dough improver that as I told you in a little while I will be explaining how it is done but I tell you that it is very very easy with two ingredients and in a single step you are going to mix
And in the meantime you are going to add a vegetable drink, a vegetable milk, I added 170 milliliters But this can be quite variable depending on the absorption of the flour But the important thing is
That you reach the consistency that I am going to be showing you Now when you can no longer integrate with a spoon you are going to continue mixing with your hands here I am adding the citrus zest that I
Had forgotten before I continue mixing you are going to go down to the counter and you are going to start kneading on one side you can knead as I am showing you now tapping the bun on the counter, double it,
Turn it over, tap the dough again and just like that or however you prefer Something super important is that this is a very moist dough it has to stick to your hands because if this doesn't happen the sweet bread goes to
Be dry and after kneading for a few minutes we are going to let this bun rest until it doubles in size while the bun rises you are going to prepare the fruits in this case I have o
100 grams of raisins, half of them are brown raisins, half of them are blonde raisins and 100 grams of nuts, which I have divided between walnuts, almonds and hazelnuts, obviously you can use whatever fruit you want, they could also be Chunks of chocolate and in this case I
Left them soaking during the time I have raising the dough, it was about an hour in citrus juice, an orange juice plus a little water but this step is optional you can place
The fruits directly on the sweet bread and here is the bun grown you are going to lower it to the counter you stretch it forming more or less a square you are going to place the fruits on top that we drain them we
Take out the liquid you are going to roll the dough on itself to one side you turn it up and roll it up for the other one these so that the fruit is well distributed and here I separated the dough in two, assemble the buns
And place in these typical sweet bread pyrotins that are for half a kilo sweet bread you can do as I did two short sweet breads two small sweet breads or use all this mixture in a single 500-gram sweet bread mold let them rise again and here I am going to moisten them this
Is the third star ingredient in this recipe which is a sugar-free syrup I in the channel I got two different recipes for syrup syrup without sugar you can choose the one you want and after that I
Covered them with coconut you take them to the oven 180 degrees preheated for between 40 to 50 minutes But this obviously will depend on your oven to cut them is ideal wait until the next day,
Now I'm going to show you how they turned out the way I kept them so that they maintain this humidity, but in the meantime I'm going to show you how to make this dough improver that I used a while ago in this
Recipe Here I have 150 milliliters of non-dairy milk you could also use water you are going to place it in a container suitable for the fire and in which you can stir well To that you are going to add 30
Grams of White flour all this still cold and strong From the heat you are going to beat well with a hand whisk to break up all the lumps and mix the vegetable milk well with the flour and now you are going
To bring it to the heat stirring constantly until this mixture thickens and you see that it comes off the container you are in Using it there, you will automatically remove it from the heat. Cover the container with cling film so that the cling film touches the cream so that
It does not dry out and crusts will not form. You will let this cool first to room temperature and then you take it with you. Put it in the fridge and when it's cold you can use it for sweet bread,
As you can see, this ingredient is super easy to make with only two ingredients that you surely have in your house. It's going to give moisture and sponginess to this dough. without the humidity and fat that the eggs and butter provide and so you can see that this is the case Now I
Am going to show you the final result of the so sweet that we made today it is important that you keep it covered in a re container with a lid in a Freezer bag wrapped in plastic wrap to keep it
Moist so you can keep it for several days and if not you can also fry it here I take it out of the mold and I'm going to add more date syrup to this sugar-free syrup that I prepared a few
Days ago on the channel and which I am going to leave you with the recipe, this also adds much more moisture and an incredible super caramel flavor and here I am going to cut it so you can see how this dough looks
Inside and this is what I wanted to show you the dough it doesn't flake it doesn't fall apart and at the same time inside it's super fluffy it doesn't get caked it's quite airy and at the same time the flavor of this sweet bread doesn't break
Obviously it's incredible but you have to try that yourself doing it in your house if you want to do it 5 with grated replace the 70 grams of grated coconut with 70 more grams
Of wholemeal flour and you want to do it with other flours I'm going to leave you here all the videos of sweet bread that I have on the channel that I think I'm already n like six or seven where you will be able to do it
Without gluten without flour with flour vegan alternatives all the options you can imagine
