Ensalada de Quinoa y Vegetales:
Ingredientes:
- 1 taza de quinoa
- 2 tazas de agua
- 1/2 taza de tomate cherry
- 1/2 taza de cebolla morada
- 1/2 taza de pepino
- 1/2 taza de zanahoria rallada
- 1/2 taza de cilantro picado
- 2 cucharadas de aceite de oliva
- 2 cucharadas de jugo de limón
- Sal y pimienta al gusto
Preparación:
1. Lava la quinoa con agua fría y colócala en una olla con dos tazas de agua. Lleva a ebullición y luego baja al mínimo, tapa y cocina por unos 15 minutos.
2. Mientras tanto, lava y prepara los vegetales. Corta los tomates cherry a la mitad, corta la cebolla morada en tiras finas, pela el pepino y corta en cubos pequeños y ralla la zanahoria.
3. Una vez lista la quinoa, déjala enfriar y luego agrega los vegetales y el cilantro. Mezcla bien.
4. En un recipiente aparte, mezcla el aceite de oliva y el jugo de limón. Agrega la sal y la pimienta al gusto.
5. Agrega la mezcla de aceite de oliva y limón a la ensalada de quinoa y vegetales. Mezcla bien y sirve.
