- 1/2 taza de leche de almendras sin azúcar
- 1/4 taza de zumo de limón
- 1 cucharada de miel o sirope de agave
- 2 cucharaditas de extracto de vainilla
- 1/4 taza de coco rallado

Preparación:

1. Precalentar el horno a 180°C. Engrasar un molde de 22cm de diámetro.

2. En un tazón grande, mezclar las harinas, la levadura, la canela, la nuez moscada y la sal.

3. En otro tazón, mezclar la zanahoria rallada, la compota de manzana, la leche de almendras, el aceite de coco y el extracto de vainilla.
